
2 inch thick dry aged bone-in new York strip -- wondrous marbling obscured by the salt. Will be cooked over a covered charcoal fire supplemented with applewood at 200 degrees until barely medium rare, then uncovered and given a hard sear at outrageous temperature.
I think I will name this steak Vincente.

And when he came to us we could not see him,
it was as though he was obscured by the sun,
though it was night.
We shielded our eyes from the glory,
and we panicked and our confusion
tore at us.
But then we could hear him lowing,
