Tonight's dinner, or Glory



2 inch thick dry aged bone-in new York strip -- wondrous marbling obscured by the salt. Will be cooked over a covered charcoal fire supplemented with applewood at 200 degrees until barely medium rare, then uncovered and given a hard sear at outrageous temperature.

I think I will name this steak Vincente.

humming to himself, with the hum of the conveyor belt

His next life, predestined to begin
After the great storm of New Jersey,
Was met by an even greater power outage

The sound of wet matches against rough and soggy surfaces

Somewhere, in New Jersey, a father curses
Somewhere, in New Jersey, a son skips

It is fourty minutes past dinner time
And in that somewhere,
What was once Vincente is reborn as
WORLD’S LARGEST PIECE OF BEEF NIGIRI

Wet hair
Wet feet
Cold beef
Cold teeth
